Since it was founded in 1885, AU NAIN has specialized in the manufacture of professional knives for butchers and chefs. They are proud that they have mastered all stages of production from forge to assembly to polissage and that they are carried out in their own atelier, which guarantees high and constant quality.
The patron saint, Jean-Paul Duroux, has become a friend over the years, a person who looks after the needs of his workforce in a fatherly and caring manner.
The re-edition of the CAMPAGNE series arose from this mutual sympathy. It is the oldest type of chef's knife in the French tradition and has its roots in the rural regions. The processing of fruit and vegetables for the family or the market was just as natural as the slaughter of a pig in winter. So it is no wonder that you can literally find exactly these cooking and kitchen knives with their sturdy wooden handles in every kitchen in the country.
The steel of the blades that are forged for PassionFrance® is an INOX steel, the composition of which is close to that of a carbon steel. This results in a sharpening that is extremely sharp, lasts for a long time and is excellent for sharpening.
When selecting the handle materials, we opted for both the traditional beech wood, from which the handles are traditionally made, and the robust rosewood. As a sign of their authenticity and quality, the knives bear the joint logo of both brands, the dwarf from AU NAIN and the Coq from PassionFrance®.
