The AURILLAC [o.ʁi.jak] is the eponymous knife from the city Aurillac, capital of the Cantal. It was the knife of the breeders and appeared on the markets of the Cantal in 19th century. ... know more

The AURILLAC [o.ʁi.jak] is the eponymous knife from the city Aurillac, capital of the Cantal. It was the knife of the breeders and appeared on the markets of the Cantal in 19th century.

It originally had 3 bolsters, including a central one. Since if its overall shape has changed little, its construction has nevertheless been simplified until the version we know today, with one head bolster, and still this characteristic curve of the lower part of the handle, which provides inimitable comfort in the hand. Its blade is of type “Bourbonnaise” like that of an YSSINGEAUX but also that of the very first LAGUIOLE knives.

On the basis of traditional components the atelier ARTO made this model with decorated spring and blade back for PassionFrance in two different sizes.
