The former owner of the cutlery PERCEVAL dined one evening in Paris with the star chef Yves Charles. Over a bottle of wine, the two of them decided to develop a knife for the star restaurant, which should have timeless and functional lines both as a steak knife in a restaurant and as a pocket knife. The wine drunk on this occasion gave the steak knives their name. Yves Charles was so enthusiastic that he decided to sell his restaurant, buy the cutlery, which was for sale due to age reasons, and become a knife maker.
